Lemony Baked artichokes with garlic hummus

At first I was intimidated, I even pricked myself on these buggers whilst washing them. You have been warned!

The hardest part is cutting and prepping these bad boys! I washed them and then sliced them right down the middle, then cut off the thorny tips (or snip them off with food scissors). Then scooped out the hairy “choke” part of the artichoke.

I placed them in the baking dish, drizzled wth olive oil, and placed a spoon of garlic hummus in each heart. Sprinkled with herbs and spices and baked at 425 for 30 mins

Oh a little tip, if you have never eaten artichokes, you are supposed to peel the leaves off and then dip into the hummus or butter, hummus in this case and scrape the pulp of the artichoke leaf off with your teeth. 

It seems like a lot of work for something so little and I have to agree, but I will keep this for dinner parties apps! Because they really are good!
